Ingredients

  • 2 cups water
  • 1 medium stalk celery
  • 1/2 medium lemon
  • 1/2 medium onion
  • 3 Tbsp vinegar
  • 2 Tbsp lemon juice
  • 1 1/2 tsp salt
  • 6 whole cloves
  • 1 bay leaf
  • 4 fish steaks (6 to 8 oz each)
  • parsley sprigs

Instructions

  1. Combine water, celery, lemon slices, onion slices, vinegar, lemon juice, salt, cloves, and bay leaf in a 2-quart microwaveproof casserole.
  2. Cover and microwave on high for 7 minutes to create the poaching broth.
  3. Carefully add the fish steaks into the broth.
  4. Cook on high for 5 minutes.
  5. Turn the fish over carefully.
  6. Cook for an additional 3 to 5 minutes until the fish is cooked through.
  7. Let stand for 5 minutes before removing the lid.
  8. Serve hot or chilled with lemon or lime, garnished with parsley.
