- Combine cornstarch and sugar in a 2-quart microwave-safe mixing bowl.
- Using a whisk, gradually add milk to the cornstarch and sugar mixture.
- Place the mixture in the microwave.
- Microwave on high for 5 to 7 minutes or until bubbly and thick, stirring after 2-minute intervals.
- Beat half of the hot mixture into the slightly beaten eggs.
- Mix this egg mixture back into the remaining hot mixture.
- Microwave on high for 1 1/2 to 2 1/2 minutes until thickened and heated throughout, stirring every 45 seconds.
- Stir in butter and vanilla with a whisk.
- Pour the pudding equally into 4 dishes.
- Cover and refrigerate before serving.
