Ingredients

  • 1/4 cup cornstarch
  • 1/3 cup sugar
  • 2 cups milk
  • 2 eggs
  • 2 tablespoons butter or margarine
  • 1 teaspoon vanilla

Instructions

  1. Combine cornstarch and sugar in a 2-quart microwave-safe mixing bowl.
  2. Using a whisk, gradually add milk to the cornstarch and sugar mixture.
  3. Place the mixture in the microwave.
  4. Microwave on high for 5 to 7 minutes or until bubbly and thick, stirring after 2-minute intervals.
  5. Beat half of the hot mixture into the slightly beaten eggs.
  6. Mix this egg mixture back into the remaining hot mixture.
  7. Microwave on high for 1 1/2 to 2 1/2 minutes until thickened and heated throughout, stirring every 45 seconds.
  8. Stir in butter and vanilla with a whisk.
  9. Pour the pudding equally into 4 dishes.
  10. Cover and refrigerate before serving.
