Ingredients

  • 4 c. all-bran
  • 2 c. 100% Bran (Nabisco)
  • 2 c. boiling water
  • 1 tsp. salt
  • 1 qt. buttermilk
  • 3 eggs
  • 1 c. sugar
  • 1 1/2 c. oil
  • 5 c. flour
  • 5 tsp. baking soda

Instructions

  1. In a large mixing bowl, combine all-bran, 100% Bran, and salt.
  2. Add boiling water to the mixture and let it sit to soften the bran.
  3. Stir in buttermilk, eggs, sugar, and oil until well combined.
  4. Sift together flour and baking soda, then gradually add to the wet mixture, stirring until just combined.
  5. Pour the batter into greased muffin tins, filling each about two-thirds full.
  6. Bake at 375°F (190°C) for approximately 20 minutes or until a toothpick inserted into the center comes out clean.
