Ingredients

  • 8 medium potatoes
  • 1/2 small onion
  • 1/2 large green pepper
  • 2 sticks celery
  • 1 Tbsp mustard
  • 3 Tbsp mayonnaise
  • 1 1/2 Tbsp sugar
  • 4 eggs
  • 1/3 cup relish
  • salt

Instructions

  1. Peel potatoes and dice them.
  2. Put the diced potatoes in a pot with water to cover and cook until tender.
  3. Drain the potatoes and let them cool.
  4. Blend onion, green pepper, and celery in a blender and drain well.
  5. Mix sugar with mayonnaise and mustard.
  6. Sprinkle salt and celery seed on the cooled potatoes.
  7. Mix in the blended vegetables and the mayonnaise mixture along with chopped eggs and relish.
