Ingredients

  • 1/2 cup chopped beef suet
  • 4 medium onions, chopped
  • 2 pounds ground chuck
  • 2 cans (1 pound 12 ounces each) tomatoes
  • 3 tablespoons chili powder
  • 3 tablespoons ground cumin
  • 1 tablespoon paprika
  • 2 cloves garlic, minced
  • 1/2 large green pepper, chopped
  • salt to taste
  • pepper to taste
  • 3 cans (15 ounces each) red beans in chili gravy
  • 1 tablespoon oregano

Instructions

  1. In a large kettle, melt the beef suet.
  2. Add garlic and onions; cook until golden.
  3. Add green pepper and ground meat; break up until crumbly.
  4. Spoon off excess liquid from the mixture.
  5. Mix in salt, pepper, and tomatoes.
  6. Add beans, chili powder, cumin, oregano, paprika, and Burgundy wine, mixing after each addition.
  7. Simmer the chili for 1 1/2 hours.
  8. Cool the chili; refrigerate for 2 days.
  9. When ready to serve, skim the fat off the top and reheat slowly.
