Million Dollar Rice

A flavorful rice dish featuring wild and basmati rice combined with savory shiitake mushrooms and butter, perfect for comforting weeknight dinners or special occasions.

Ingredients

  • 3 c. chicken broth
  • 1/2 c. wild rice
  • 1/2 c. basmati rice
  • 5 Tbsp. butter
  • 1/2 lb. fresh shiitake mushrooms, stems trimmed
  • salt
  • freshly ground pepper

Instructions

  1. Cook the wild and basmati rice in chicken broth for 25 minutes or until water is absorbed.
  2. Add 2 tablespoons of butter to the cooked rice and transfer to a baking dish.
  3. Use the remaining butter to sauté the shiitake mushrooms for 4 minutes.
  4. Stir the sautéed mushrooms into the rice and season with salt and freshly ground pepper.
  5. Cover the baking dish and bake at 250°F for 20 minutes.
