Ingredients

  • 1 cup sugar
  • 2 eggs, beaten
  • 1 1/2 cups flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 3 tablespoons melted shortening
  • 1/2 cup nuts
  • 1/2 cup mincemeat

Instructions

  1. Combine all ingredients in a mixing bowl.
  2. Mix only until combined.
  3. Spoon the batter into a greased loaf pan.
  4. Bake at 350°F (175°C) for 1 hour.
  5. Allow to cool before serving. Freezes well.
