Ingredients

  • 1/3 cup shortening
  • 1/2 cup sugar
  • 1 egg
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon soda
  • 2/3 cup dried mincemeat or 3/4 cup moist mincemeat
  • 1/2 teaspoon vanilla

Instructions

  1. Cream shortening; add sugar gradually and blend well.
  2. Add beaten egg; mix thoroughly.
  3. Sift together flour, salt, and soda; add to the creamed mixture.
  4. Fold in mincemeat and vanilla until well combined.
  5. If dry mincemeat is used, add 1/2 cup water and cook until water is absorbed, about 8 minutes; then cool.
  6. Drop by teaspoonfuls onto a greased cookie sheet, spacing 2 inches apart.
  7. Bake at 400°F for 8 to 10 minutes until golden brown.
