Ingredients

  • 1 egg
  • 1 cup sugar
  • 1/2 cup pecans, chopped
  • 1 (No. 303) can applesauce
  • 1 teaspoon vanilla
  • 2 teaspoons soda
  • 2 cups flour
  • 1 cup blackberry jam
  • 1 cup seedless raisins
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 1/4 teaspoon allspice
  • 1/2 cup oil

Instructions

  1. Mix egg, sugar, and oil together in a bowl.
  2. Combine flour (save out 1/4 cup), soda, cloves, cinnamon, and allspice in a separate bowl.
  3. Add salt to the dry ingredients.
  4. Alternate adding dry ingredients and applesauce to the wet mixture, mixing well after each addition.
  5. Coat the raisins and nuts with the reserved 1/4 cup flour, then fold into the batter.
  6. Pour the batter into a greased and floured 9 x 13-inch oblong pan.
  7. Bake at 300°F (150°C) for 60 minutes or until a toothpick inserted in the center comes out clean.
  8. Spread with caramel icing once cooled.
