Ingredients

  • 6 medium Idaho potatoes
  • 2 cups shredded Cheddar cheese
  • 1/4 cup butter
  • 2 cups sour cream
  • 1/3 cup chopped green onions
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper

Instructions

  1. Cook potatoes in skins until tender.
  2. Cool, peel, and coarsely shred the potatoes.
  3. In a saucepan, cook butter and shredded Cheddar cheese until almost melted. Remove from heat.
  4. Blend chopped green onions, sour cream, and salt and white pepper together.
  5. Add shredded potatoes to the sour cream mixture and stir well.
  6. Turn in the butter and cheese mixture to the potato mixture.
  7. Transfer the mixture into a 2-quart casserole dish.
  8. Dot the top with small bits of butter.
  9. Bake in an oven preheated to 350°F for 25 minutes or until heated through.
  10. Cover the casserole with a lid or foil while baking.
