- Mix Ricotta, Mozzarella, and Parmesan cheeses together in a bowl.
- Cut each biscuit horizontally to make 20 thin biscuits.
- Gently press each biscuit into an oval shape.
- Place a slice of pepperoni or a small piece of spinach on each biscuit, add a level teaspoon of cheese filling.
- Moisten the edges of the dough and fold over to enclose the filling.
- Pinch the edges carefully to seal the calzone.
- Place the filled calzones on a lightly greased cookie sheet.
