Mini Calzones

Mini calzones are delicious, portable cheesy pockets filled with ricotta, mozzarella, and Parmesan, customizable with pepperoni or spinach, perfect for snacks, parties, or quick meals.

Ingredients

  • 1 cup Ricotta cheese
  • 1/2 cup shredded Mozzarella cheese
  • 1/4 cup fresh grated Parmesan cheese
  • 1 (10 oz.) package flaky refrigerator biscuits
  • pepperoni (optional)
  • fresh spinach (optional)
  • 1 cup marinara sauce

Instructions

  1. Mix Ricotta, Mozzarella, and Parmesan cheeses together in a bowl.
  2. Cut each biscuit horizontally to make 20 thin biscuits.
  3. Gently press each biscuit into an oval shape.
  4. Place a slice of pepperoni or a small piece of spinach on each biscuit, add a level teaspoon of cheese filling.
  5. Moisten the edges of the dough and fold over to enclose the filling.
  6. Pinch the edges carefully to seal the calzone.
  7. Place the filled calzones on a lightly greased cookie sheet.
  8. Bake at 350°F for 20 minutes until golden brown.
  9. Serve warm with marinara sauce.
