Ingredients

  • 12 vanilla wafers
  • 2 (8 oz) cream cheese
  • 1/2 cups sugar
  • 1 tsp vanilla
  • 2 eggs

Instructions

  1. Line muffin tin with foil liners.
  2. Place 1 vanilla wafer in each liner.
  3. Mix cream cheese, sugar, and vanilla on medium speed until well blended.
  4. Add eggs to the mixture.
  5. Mix well until smooth.
  6. Pour the filling over wafers, filling each liner 3/4 full.
  7. Bake for 25 minutes at 325 degrees Fahrenheit.
  8. Remove from the pan when cooled.
  9. Chill the cheesecakes in the refrigerator.
  10. Top with fruit preserves or cherry pie filling before serving.
