Mini Crab Cakes

Ingredients

  • 2 tbsp butter
  • 1 small onion, minced
  • 3 celery ribs, diced
  • 1 tsp paprika
  • 1 lb fresh lump crabmeat, drained
  • 2 Tbsp minced fresh parsley
  • 1 tsp fresh thyme
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 c soft breadcrumbs
  • 2 large eggs, lightly beaten
  • 1/4 c vegetable oil

Instructions

  1. Melt butter in a large skillet over medium-high heat; add onion, and saut for 3 minutes.
  2. Stir in celery and paprika.
  3. Cover and cook over low heat 5 minutes; cool.
