Ingredients

  • 1 1/4 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cup buttermilk
  • 1 egg
  • 1 tablespoon cooking oil
  • nonstick spray coating

Instructions

  1. In a medium mixing bowl, stir together the flour, sugar, baking powder, baking soda, and salt.
  2. In another mixing bowl, combine the buttermilk, egg, and cooking oil.
  3. Add the wet ingredients to the dry ingredients all at once and stir just until combined, with some lumps remaining.
  4. Spray an unheated nonstick griddle or heavy skillet with nonstick spray coating.
  5. Pour about 1 tablespoon of batter onto the hot griddle or skillet for each pancake.
  6. Cook until golden brown on both sides, turning when bubbles form on the surface and edges look slightly dry, about 1 minute per side.
