- Beat eggs in a medium-sized bowl until slightly frothy.
- Stir in 1/2 cup of milk, all-purpose flour, whole wheat flour, and salt until combined.
- Add remaining milk and 1 tablespoon melted butter.
- Beat just until smooth.
- Gently stir in finely chopped toasted almonds.
- Pour batter into well-greased 1 3/4-inch muffin cups, filling each half full (about scant tablespoon).
- Bake for 10 minutes at 450°F.
- Reduce oven temperature to 325°F and bake for another 20 to 25 minutes.
- Make a small slit in the side of each popover to let steam escape.
- Serve hot with butter.
