Ingredients

  • 3 eggs
  • 1 cup milk
  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon salt
  • 1 tablespoon butter or margarine, melted
  • 1/4 cup finely chopped toasted almonds

Instructions

  1. Beat eggs in a medium-sized bowl until slightly frothy.
  2. Stir in 1/2 cup of milk, all-purpose flour, whole wheat flour, and salt until combined.
  3. Add remaining milk and 1 tablespoon melted butter.
  4. Beat just until smooth.
  5. Gently stir in finely chopped toasted almonds.
  6. Pour batter into well-greased 1 3/4-inch muffin cups, filling each half full (about scant tablespoon).
  7. Bake for 10 minutes at 450°F.
  8. Reduce oven temperature to 325°F and bake for another 20 to 25 minutes.
  9. Make a small slit in the side of each popover to let steam escape.
  10. Serve hot with butter.
