Ingredients

  • 18 vanilla wafers
  • 3 (8 oz.) packages cream cheese, softened
  • 3/4 cup sugar
  • 1 tablespoon lemon juice
  • 1/4 teaspoon grated lemon peel
  • 3/4 teaspoon vanilla
  • 3 eggs

Instructions

  1. Place wafers flat side down on the bottom of each of the 18 foil baking cups.
  2. Combine cream cheese, sugar, lemon juice, lemon peel, and vanilla, mixing at medium speed with an electric mixer until blended.
  3. Add eggs, one at a time, mixing well after each addition.
  4. Pour the mixture into the baking cups, filling each almost full.
  5. Bake at 325°F (163°C) for 25 minutes.
  6. Allow to cool before removing from the pan.
  7. Chill the cheesecakes in the refrigerator.
  8. Top each cheesecake with preserves before serving.
