Ingredients

  • 1 lb. carrots, sliced thin
  • 2 Tbsp. butter or margarine
  • 1 tsp. lemon juice
  • 1 1/2 Tbsp. sugar
  • 1/3 c. chicken broth
  • salt and pepper
  • 2 tsp. chopped, fresh mint

Instructions

  1. In a small saucepan, steam carrots over boiling water until just tender-crisp.
  2. Drain the carrots.
  3. Heat butter in a deep skillet over medium heat.
  4. Add carrots, lemon juice, and sugar; cook, shaking the pan, until carrots are coated.
  5. Add chicken broth and continue cooking until the liquid evaporates and carrots are light golden.
  6. Season with salt and pepper to taste.
  7. Add chopped fresh mint and mix well.
  8. Serve immediately.
