Mint Oreo Bars

- For the bars:
- Preheat oven to 350°F. Grease and lightly flour a 9-x-13-inch baking pan.
- Using a stand mixer with the paddle attachment, cream butter and sugars together on medium-high speed. Add eggs and vanilla and beat well, scraping down the bowl after each egg addition.
- Turn speed to low and add the dry ingredients and mix until incorporated. Add the crushed Oreos and mint chips and try and evenly distribute them best you can.
- Bake for 35-40 minutes. Remove from the oven and cool on a wire rack. While cooling, prepare the topping.
- For the topping:
- Melt drops over a double boiler. When melted, add cream and corn syrup. Mix until smooth.
- Spread over the bars. While the glaze is still wet, sprinkle the crushed cookies on top. Press down if you need to. Let the glaze firm up before serving.
