Ingredients

  • 2 cups chocolate chips
  • 1/2 cup butter
  • 1 1/2 cups powdered sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • mint or rum extract

Instructions

  1. Melt chocolate chips in a double boiler and let cool.
  2. Combine butter and powdered sugar and cream together.
  3. Add eggs and beat well.
  4. Add melted chocolate mixture and vanilla.
  5. Beat until smooth.
  6. Add 3 capfuls of mint or rum extract.
  7. Drop teaspoons of the mixture onto a wax paper-lined cookie sheet.
  8. Harden in the refrigerator.
  9. Store several weeks.
