Sweet, minty snowballs coated in shredded coconut make a delightful treat perfect for festive occasions or as a refreshing dessert for all ages.

Ingredients

  • 1/3 cup sugar
  • 2 tablespoons light corn syrup
  • 2 tablespoons water
  • 1/2 teaspoon peppermint extract
  • 1/4 pound (16) marshmallows
  • 1 cup shredded coconut

Instructions

  1. Combine sugar, corn syrup, and water in a small saucepan.
  2. Place on medium heat and stir until all ingredients are dissolved.
  3. Bring to a boil and cook for 2 minutes.
  4. Remove from heat and add peppermint extract.
  5. Using a toothpick, dip each marshmallow in the hot syrup.
  6. Roll each coated marshmallow in shredded coconut.
