Minty Rice Salad
Ingredients
- 2 cups cooked brown or wild rice ⓘ
- 3 medium tomatoes, seeded and finely chopped ⓘ
- 1 cup fresh or frozen peas ⓘ
- 1 cucumber, seeded and finely chopped ⓘ
- 1 green pepper, finely chopped ⓘ
- 1/2 cup sliced green onions ⓘ
- 1/2 cup sliced radishes ⓘ
- 1/3 cup olive oil ⓘ
- 3 tablespoons lemon juice ⓘ
- 1/2 teaspoon salt, optional ⓘ
- 2 tablespoons chopped fresh mint ⓘ
- 1/4 teaspoon pepper ⓘ
Instructions
- In a large bowl, combine rice, tomatoes, peas, cucumber, green pepper, green onions and radishes; set aside. In a small bowl, combine remaining ingredients. Pour over rice and vegetables; mix well. Chill for at least 1 hour. Serve cold.
