Ingredients

  • Mississippi barbecue sauce or your favorite barbecue sauce
  • 4 chicken breasts
  • 2 cans crescent roll dough
  • 1 can yellow whole kernel corn, drained
  • 1 cup cherry tomatoes, cut into halves
  • 3 green onions, chopped
  • 2 small green bell peppers, cored and diced
  • 1/4 cup sour cream
  • 1/4 cup plain yogurt

Instructions

  1. Rinse chicken, marinate with Mississippi barbecue sauce, and grill over open flame.
  2. While chicken is grilling, mix drained corn, halved cherry tomatoes, chopped green onions, and diced green bell peppers.
  3. In a small bowl, combine sour cream and plain yogurt.
  4. Pour half of the sour cream/yogurt mixture over the vegetable mixture and set aside.
  5. Once chicken is grilled, cut into strips and marinate with additional barbecue sauce.
  6. Preheat oven to 375°F (190°C).
  7. Open crescent roll dough and lay out each piece singly on an ungreased cookie sheet.
  8. Place a strip of grilled chicken at the wide end of each crescent roll dough.
  9. Spoon about one tablespoon of the vegetable mixture on top of the chicken.
  10. Sprinkle shredded Cheddar cheese over the vegetables.
  11. Roll up each crescent dough around the filling, sealing the ends.
  12. Bake in the preheated oven for 11 to 13 minutes or until golden brown.
