Ingredients

  • 1 cup corn
  • 1 onion
  • 1 zucchini
  • 2 tomatoes
  • Salt
  • Pepper
  • 2 cloves garlic
  • 1 teaspoon oregano
  • 2 tablespoons butter or margarine

Instructions

  1. Chop the onion, zucchini, and tomatoes into bite-sized pieces.
  2. Mince the garlic finely.
  3. In a large skillet, melt butter or margarine over medium heat.
  4. Add the onion and garlic; sauté until fragrant and translucent, about 3-4 minutes.
  5. Add the corn, zucchini, and tomatoes to the skillet.
  6. Season with salt, pepper, and oregano to taste.
  7. Cook for another 10-12 minutes, stirring occasionally, until vegetables are tender and flavors meld.
  8. Adjust seasoning if needed and serve hot.
