Ingredients

  • 3 egg whites
  • 1 tsp. freeze-dried instant coffee (dry)
  • 1/4 tsp. cream of tartar
  • 1/8 tsp. salt
  • 1/2 cup sugar
  • 2 Tbsp. cocoa
  • 2 cups flaked coconut

Instructions

  1. Preheat oven to 300°F.
  2. Grease a cookie sheet lightly.
  3. Beat egg whites, instant coffee, cream of tartar, and salt in a medium bowl on high speed until foamy.
  4. Beat in sugar, one tablespoon at a time, on high speed.
  5. Continue beating until stiff peaks form.
  6. Do not overbeat.
  7. Fold in cocoa and flaked coconut.
