Mocha Swirl Cheesecake

- Grease a spring-form pan.
- Press ground hazelnuts or almonds onto the bottom and 2 inches up the side of the pan.
- Set aside.
- Heat semi-sweet chocolate, water, and 1 teaspoon coffee crystals in a pan over low heat until melted. Cool.
- Beat softened cream cheese, sugar, flour, and vanilla with an electric mixer until fluffy.
- Add eggs one at a time, beating after each addition.
- Beat on low speed until ingredients are combined.
- Remove 1/3 of batter and stir in the cooled chocolate mixture.
- Stir the milk and dissolved coffee into the remaining batter.
- Pour half of the light batter into the prepared spring-form pan.
- Spoon half of the chocolate batter over the light batter.
- Repeat with remaining batters.
- Make a few swirls using a knife to create a marbled effect.
- Bake at 325°F (163°C) for 45 minutes or until the center appears nearly set.
- Cool in the pan for 15 minutes.
- Loosen the crust from the pan with a knife.
- Cool for an additional 30 minutes.
- Remove the sides of the spring-form pan.
- Cool completely and chill for at least 4 hours before serving.
