Ingredients

  • 1 Tbsp margarine
  • 1 cup finely ground hazelnuts or almonds
  • 2 oz semi-sweet chocolate
  • 2 Tbsp water
  • 1 tsp instant coffee crystals
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 2 Tbsp flour
  • 1 tsp vanilla
  • 4 eggs
  • 2 Tbsp milk
  • 1/2 tsp coffee dissolved in 2 Tbsp water

Instructions

  1. Grease a spring-form pan.
  2. Press ground hazelnuts or almonds onto the bottom and 2 inches up the side of the pan.
  3. Set aside.
  4. Heat semi-sweet chocolate, water, and 1 teaspoon coffee crystals in a pan over low heat until melted. Cool.
  5. Beat softened cream cheese, sugar, flour, and vanilla with an electric mixer until fluffy.
  6. Add eggs one at a time, beating after each addition.
  7. Beat on low speed until ingredients are combined.
  8. Remove 1/3 of batter and stir in the cooled chocolate mixture.
  9. Stir the milk and dissolved coffee into the remaining batter.
  10. Pour half of the light batter into the prepared spring-form pan.
  11. Spoon half of the chocolate batter over the light batter.
  12. Repeat with remaining batters.
  13. Make a few swirls using a knife to create a marbled effect.
  14. Bake at 325°F (163°C) for 45 minutes or until the center appears nearly set.
  15. Cool in the pan for 15 minutes.
  16. Loosen the crust from the pan with a knife.
  17. Cool for an additional 30 minutes.
  18. Remove the sides of the spring-form pan.
  19. Cool completely and chill for at least 4 hours before serving.
