- Beat eggs; add zucchini, oil, vanilla and pudding mix.
- Beat until smooth.
- Add instant coffee and cake mix.
- Mix on low speed until moistened, then on medium speed for 10 minutes.
- Turn into a well-greased Bundt pan and bake at 325° for 1 hour and 10 minutes or until done.
- Top with powdered sugar glaze.
