Ingredients

  • 2 1/2 cups oat bran cereal
  • 1 teaspoon baking powder
  • 1/4 cup raisins
  • 1/4 cup chopped nuts
  • 1 1/4 cups evaporated skim milk
  • 2 tablespoons vegetable oil
  • 2 egg whites
  • 1/4 cup molasses

Instructions

  1. Preheat oven to 425°F.
  2. Mix the dry ingredients in a bowl.
  3. Blend all other ingredients in a blender and add to dry ingredients.
  4. Stir just to combine.
  5. Line muffin pan with paper baking cups and fill with batter.
  6. Bake for 16 minutes or until a toothpick comes out clean.
