Ingredients

  • 2 envelopes gelatin
  • 2 1/2 cups chicken broth
  • 4 cups diced chicken
  • 2 teaspoons lemon juice
  • 2 tablespoons chopped parsley
  • 3/4 cup chopped celery
  • 2 tablespoons pickle relish
  • 1 cup mayonnaise
  • salt and pepper
  • 1 medium tomato, sliced
  • 1 medium green pepper, sliced into rings

Instructions

  1. Soften gelatin in 1/2 cup chicken broth.
  2. Melt remaining chicken broth; add softened gelatin and stir until dissolved.
  3. Add diced chicken, salt, and pepper to the gelatin mixture.
  4. Cook until the mixture begins to thicken.
  5. Fold in lemon juice, chopped parsley, chopped celery, pickle relish, mayonnaise, sliced tomato, and sliced green pepper.
  6. Pour the mixture into a 2-quart mold or loaf pan.
  7. Chill in the refrigerator for several hours until set.
  8. Slice and serve on lettuce, garnished with tomato slices and green pepper rings.
