- Soften gelatin in 1/2 cup chicken broth.
- Melt remaining chicken broth; add softened gelatin and stir until dissolved.
- Add diced chicken, salt, and pepper to the gelatin mixture.
- Cook until the mixture begins to thicken.
- Fold in lemon juice, chopped parsley, chopped celery, pickle relish, mayonnaise, sliced tomato, and sliced green pepper.
- Pour the mixture into a 2-quart mold or loaf pan.
- Chill in the refrigerator for several hours until set.
- Slice and serve on lettuce, garnished with tomato slices and green pepper rings.
