Ingredients

  • 5 lb. yellow squash
  • 8 oz. onion
  • 3 chicken bouillon cubes
  • 2 tsp. coarse black pepper
  • 1 Tbsp. sugar
  • 1 lb. cream cheese
  • 1/2 lb. butter
  • 2 oz. green chilies
  • 48 oz. water

Instructions

  1. Cut yellow squash into 1/2-inch rounds.
  2. Dice onion into 1/4-inch pieces and place in a medium stockpot with water, sugar, black pepper, and chicken bouillon cubes.
  3. Bring to a boil, then add squash and cook until just tender.
  4. Drain through a colander and transfer to a shallow pan.
  5. Add cream cheese, butter, and green chilies to the squash.
  6. Mix well and serve immediately or refrigerate uncovered until cooled.
  7. Once cooled, cover and serve.
