Mommy'S Easter Bonnet Cake
Ingredients
- 1 c. sugar ⓘ
- 4 Tbsp. water ⓘ
- 1/2 c. corn syrup (use Karo white syrup) ⓘ
- 4 beaten egg whites ⓘ
- 2 tsp. lemon extract ⓘ
- 2 drops yellow food coloring ⓘ
- 4 eggs ⓘ
- 2 c. sugar ⓘ
- 1 c. butter, softened
- 1/2 c. vegetable oil
- 2 c. cake flour ⓘ
- 1 tsp. baking soda ⓘ
- 1 c. buttermilk ⓘ
- 1 tsp. vanilla
- 2 oz. red food coloring ⓘ
Instructions
- In a large mixing bowl, combine the first five ingredients (eggs, sugar, butter, vegetable oil and vinegar).
- Beat until smooth and creamy.
- In another large bowl, sift together the cake flour and the baking soda.
- Begin to alternate this flour mixture, alternating with buttermilk, to the beaten egg mixture, until all the flour and buttermilk have been blended to form the cake mixture.
- Add the vanilla and red food coloring, beating until it is the same color throughout the mixture.
