  • 1 cup grated Parmesan cheese
  • 1/4 lb pasteurized yellow cheese, sliced
  • 1 cup chicken bouillon
  • salt

Instructions

  1. In a large greased casserole, layer sliced potatoes, then sliced onions, and some of each of the cheeses.
  2. Season each layer well with salt and pepper.
  3. Repeat layers until all ingredients are used up.
  4. Pour chicken bouillon over the top of the layered casserole.
  5. Sprinkle reserved Parmesan cheese on top.

Tips & Substitutions

For a creamier texture, consider adding a layer of heavy cream or milk between the cheese layers. If you want to reduce sodium, opt for low-sodium chicken bouillon. You can also mix in some fresh herbs like thyme or rosemary for added flavor. If you prefer a sharper taste, substitute the Swiss cheese with Gruyère.

Serving Suggestions

Mom's 3-Cheese Scalloped Potatoes make a fantastic side dish for any protein, especially roasted meats. They pair beautifully with Herb Butter Roasted Chicken or even a simple green salad for a complete meal. For a more festive touch, serve alongside Katherine's Gravy for Dressing during holiday gatherings.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3-4 days. To reheat, place the casserole in the oven at 350°F until heated through, about 20-30 minutes. You can also microwave individual portions, but be cautious not to overheat, as this can dry out the potatoes.

How can I make this dish ahead of time?

You can prepare the casserole up to a day in advance. Assemble the layers, cover tightly, and refrigerate. When ready to bake, simply add a few extra minutes to the cooking time to ensure it heats through thoroughly.
