Ingredients

  • 3 cups unsifted flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup shortening
  • 1 cup sugar
  • 4 eggs
  • 1/2 cup milk
  • 1 teaspoon lemon juice
  • 1 cup drained crushed pineapple
  • 2 cups fresh blueberries
  • 1 cup chopped nuts
  • 1/2 cup flaked coconut

Instructions

  1. Sift flour with baking powder, baking soda, and salt.
  2. Cream shortening until light and fluffy.
  3. Gradually beat in sugar.
  4. Stir in eggs, milk, lemon juice, and pineapple.
  5. Fold in blueberries, chopped nuts, and flaked coconut.
  6. Pour batter into a greased loaf pan.
  7. Bake at 350°F (175°C) for about 50 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before removing from pan and serving.
