Ingredients

  • 1 1/2 cups sugar
  • 5 tablespoons shortening
  • 3 eggs
  • 1 cup milk
  • 3 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon nutmeg
  • pinch of salt
  • 1 quart huckleberries

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9 x 13-inch pan.
  2. In a mixing bowl, cream together the sugar and shortening until smooth.
  3. Add the well-beaten eggs and milk; mix well.
  4. In a separate bowl, combine the flour, baking powder, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold the huckleberries, rolled in flour, into the batter.
  7. Pour the batter into the prepared pan, spreading evenly.
  8. Bake for 45 minutes or until tested done and brown.
  9. Serve warm, sliced like cake, with milk or on its own.
