Ingredients

  • 4 eggs
  • 2 cups sugar
  • 1 cup salad oil
  • 2 teaspoons coconut flavoring
  • 3 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 1 cup Angel Flake coconut
  • 1 cup chopped nuts

Instructions

  1. Beat eggs, sugar, salad oil, and coconut flavoring until light and fluffy.
  2. Alternate adding dry ingredients with buttermilk to the mixture.
  3. Stir in Angel Flake coconut and chopped nuts.
  4. Pour batter into greased and floured loaf pans or a prepared Bundt pan.
  5. Bake at 325°F (163°C) for 50 minutes.
