Ingredients

  • 32 oz. frozen hash brown potatoes, thawed
  • 1/4 cup melted margarine
  • 1 can cream of chicken soup
  • 12 oz. grated sharp Cheddar cheese
  • 8 oz. sour cream
  • 1 teaspoon salt
  • 1 medium onion, grated

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the thawed hash brown potatoes, melted margarine, cream of chicken soup, grated sharp Cheddar cheese, sour cream, salt, and grated onion. Mix well.
  3. Grease a 9 x 13-inch baking dish and spread the mixture evenly into it.
  4. In a small bowl, mix the remaining melted margarine with 2 cups crushed cornflakes.
  5. Sprinkle the crushed cornflake mixture evenly over the top of the potato mixture.
  6. Bake in the preheated oven for 45 minutes to 1 hour, until hot and bubbly.
