Ingredients

  • 2 c. uncooked rice
  • 5 meatballs, crushed
  • 2 eggs
  • 1/2 c. grated Parmesan
  • parsley
  • salt and pepper
  • garlic powder
  • 1/2 c. bread crumbs

Instructions

  1. Prepare rice according to package directions and drain if necessary.
  2. Mix all remaining ingredients except bread crumbs and oil together in a large bowl.
  3. Add warm cooked rice to the mixture and blend well.
  4. Form the mixture into balls about the size of a tennis ball.
  5. Roll each ball in bread crumbs to coat evenly.
  6. Heat oil to 350°F (175°C) and fry the rice balls a few at a time until golden brown.
  7. Remove from oil and drain on paper towels. Serve warm.
