Ingredients

  • 1 cup shortening
  • 1/2 cup butter or margarine, softened
  • 1 1/3 cups sugar
  • 1 cup packed brown sugar
  • 4 eggs
  • 3 teaspoons vanilla
  • 1 teaspoon lemon juice
  • 3 cups flour
  • 1 1/2 teaspoons salt
  • 2 teaspoons baking soda
  • 1/2 cup Quick-Cooking oats
  • 1 teaspoon cinnamon
  • 4 cups semi-sweet chocolate chips
  • 2 cups pecans or walnuts

Instructions

  1. In a large mixing bowl, cream shortening, butter, and sugar until light and fluffy, about 5 minutes.
  2. Add eggs one at a time, beating well after each addition.
  3. Add vanilla and lemon juice to the mixture.
  4. Combine flour, oats, baking soda, salt, and cinnamon in a separate bowl.
  5. Gradually add the dry ingredients to the creamed mixture, mixing well.
  6. Stir in chocolate chips and nuts.
  7. Drop by 1/4 cupfuls onto a lightly greased baking sheet, spacing three inches apart.
  8. Bake at 350°F (175°C) for 14-16 minutes or until lightly browned and set in the center.
  9. Allow cookies to cool for two minutes before transferring to a wire rack.
