Ingredients

  • Italian bread crumbs
  • 1 Tbsp. margarine
  • 4 chicken cutlets
  • 4 to 8 slices hot pepper Monterey Jack cheese
  • 2 to 3 sliced fresh Italian plum tomatoes

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Dip chicken cutlets in beaten egg if desired, then coat with Italian bread crumbs.
  3. In a skillet, melt margarine over medium heat and cook breaded chicken until golden brown, about 4-5 minutes per side.
  4. Place cooked chicken cutlets in a baking dish.
  5. Top each cutlet with 1 to 2 slices of hot pepper Monterey Jack cheese (or mozzarella for mild version).
  6. Add sliced fresh Italian plum tomatoes on top of the cheese.
  7. Bake in the preheated oven until cheese is melted and bubbly, about 15 minutes.
  8. Serve hot with your favorite side dishes.
