Ingredients

  • 2 lb. carrots
  • 1/3 cup lemon juice
  • 2 Tbsp. olive juice
  • 2 tsp. finely chopped fresh parsley
  • 1 tsp. paprika
  • 1/2 tsp. ground cumin
  • 1/2 tsp. asafetida or 2 cloves garlic, crushed
  • 1/2 tsp. spike or other vegetable seasoned salt
  • 1/4 tsp. cinnamon
  • 1/4 tsp. honey

Instructions

  1. Scrub carrots well, cut tops and tips off, and steam until they can be easily cut with a spoon.
  2. Remove from heat and use forks to tear carrots into bite-sized pieces.
  3. Add lemon juice, olive juice, parsley, paprika, cumin, garlic or asafetida, vegetable seasoned salt, cinnamon, and honey.
  4. Toss until thoroughly mixed.
  5. Cover and refrigerate overnight or at least 3 to 4 hours before serving.

Tips & Substitutions

For a vibrant flavor, consider using fresh lemon juice instead of bottled. If you don't have asafetida, garlic can work well but use it sparingly as it has a stronger taste. If you're looking to reduce the sweetness, you can omit the honey or substitute it with agave syrup. Fresh mint can also be a delightful addition for a refreshing twist.

Serving Suggestions

This Moroccan Carrot Salad pairs beautifully with Dilled Baby Potatoes for a flavorful side dish. Serve it alongside grilled meats or as part of a mezze platter. For a complete meal, consider adding some chickpeas or quinoa for protein. A sprinkle of additional fresh parsley before serving adds a nice touch.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. The flavors will continue to meld, improving the taste over time. To enjoy, serve it cold directly from the fridge. If you prefer it a bit warmer, let it sit at room temperature for about 15 minutes before serving.
