Moroccan Style Couscous
Ingredients
- 1 medium onion, chopped ⓘ
- 3 tablespoons olive oil
- 2 garlic cloves, finely minced ⓘ
- 2 teaspoons salt ⓘ
- 1 tablespoon curry powder ⓘ
- 1 teaspoon cinnamon ⓘ
- 1 teaspoon ground cumin ⓘ
- 2 cups cubed cooked chicken breasts
- 2 1/4 cups chicken broth ⓘ
- 3 medium carrots, sliced 1/4-inch thick ⓘ
- 2 medium potatoes, cut in 1/2-inch cubes ⓘ
- 1 cup canned chick-peas, drained ⓘ
- 1/2 cup dried currant ⓘ
- 2 cups uncooked couscous ⓘ
Instructions
- Heat olive oil over medium heat in a large saucepan with a tight-fitting lid.
- Add onions and saute until translucent.
- Add garlic, curry powder, cinnamon, cumin, and salt. Cook for a few minutes, stirring frequently, until fragrant.
- Add chicken, chicken broth, potatoes, carrots, currants, and chickpeas.
- Bring to a boil; reduce heat, cover, and simmer until carrots and potatoes are tender.
- Return to a boil, add couscous, and stir well.
- Cover, remove from heat, and let sit for about ten minutes. Fluff with a fork before serving.
