Ingredients

  • 3 cups (8 oz.) mostaccioli
  • 2 cups fresh asparagus tips
  • 1/2 cup mayonnaise
  • 1/4 cup Italian dressing
  • 2 tablespoons balsamic or red wine vinegar
  • 1/2 cup sweet red pepper strips
  • 1/2 cup sliced zucchini
  • 1/2 cup diced red onion
  • 1/4 cup fresh basil leaves

Instructions

  1. Cook the mostaccioli according to package directions.
  2. During the last 2 minutes of cooking, add the asparagus tips to the boiling water.
  3. Drain the pasta and asparagus.
  4. Rinse with cold water to cool quickly.
  5. In a bowl, mix mayonnaise, Italian dressing, balsamic or red wine vinegar.
  6. Add red pepper strips, sliced zucchini, diced red onion, and chopped basil.
  7. Combine the cooked pasta and vegetables with the dressing mixture.
  8. Toss gently to coat and serve chilled.
