Ingredients

  • 2 c. yellow-eye beans
  • 1/2 tsp. baking soda
  • 1 tsp. dry mustard
  • 3/4 to 1 c. granulated sugar
  • 1/4 tsp. black pepper
  • 1 1/2 tsp. salt
  • salt pork

Instructions

  1. Cover the yellow-eye beans and baking soda with water and boil for about 2 hours.
  2. Add dry mustard, granulated sugar, black pepper, and salt to the beans.
  3. Slice a small piece of salt pork to the rind and place it in the center of the beans in a 2 to 3-quart baking dish.
  4. Bake at 325°F for about 2 hours until the beans are soft, adding water from time to time to prevent drying out.
