Old Fashioned Bean Soup

Ingredients

  • 2 cups white beans
  • 1 meaty ham bone
  • 3 quarts water
  • 1/2 cup mashed potatoes
  • 1/4 cup parsley, finely chopped
  • 3 onions, diced
  • 4 to 5 stalks celery, chopped
  • 1 clove garlic, minced

Instructions

  1. Soak the white beans in water to cover overnight, then drain.
  2. Place the soaked beans and the ham bone in a large soup kettle, add 3 quarts of water, and simmer slowly for one hour.
  3. Stir in the mashed potatoes and let simmer for another hour.
  4. Add diced onions, chopped celery, and minced garlic to the kettle, then simmer for another hour or until the vegetables are tender.
  5. Remove the ham bone from the soup, dice the meat off of it, and return the meat to the kettle.
  6. Discard the ham bone and serve the soup hot with corn bread or large chunks of warm French bread.
