Ingredients

  • 1 cup natural applesauce
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 egg white
  • 1/4 cup confectioners sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven and prepare a baking sheet with parchment paper.
  2. In a mixing bowl, combine all-purpose flour, sugar, baking powder, ground cinnamon, and a pinch of salt.
  3. In a separate bowl, whisk the egg white and vanilla extract until frothy.
  4. Add the egg white mixture to the dry ingredients and mix well to form a batter.
  5. Spread a layer of heated jam on the prepared baking sheet.
  6. Pour the batter over the jam evenly.
  7. Bake in the preheated oven until golden and cooked through, about 15 minutes.
  8. Remove from oven and let cool slightly.
  9. Carefully roll the baked sheet with the jam inside to form a jelly roll.
  10. Slice and serve, optionally dusted with confectioners sugar and ground cinnamon.
