Ingredients

  • 3 or 4 lb. red skinned potatoes, boiled and cubed
  • 3 stalks chopped celery
  • 1 chopped onion
  • 1/2 chopped red onion
  • 1 green pepper chopped
  • 1/2 red pepper chopped
  • 1/2 c. milk
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1/8 tsp. paprika
  • 1 tsp. sugar
  • 1 tsp. vinegar
  • 2 c. mayo or salad dressing

Instructions

  1. Toss together cooked cubed potatoes, chopped celery, chopped onion, red onion, green pepper, and red pepper in a large bowl.
  2. In a separate bowl, blend mayonnaise or salad dressing, milk, salt, pepper, paprika, and sugar until well combined.
  3. Add vinegar to the dressing mixture and whisk until smooth.
  4. Pour the dressing over the potato and vegetable mixture and gently mix until all ingredients are coated.
  5. Serve warm or chilled, garnished with fresh parsley or sprinkled with paprika.
