Ingredients

  • 1 cup hot water
  • 1 cup cornmeal
  • 2 tablespoons shortening
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 teaspoon baking soda
  • 1 cup buttermilk
  • 2 eggs

Instructions

  1. Mix 1 cup hot water with 1 cup cornmeal and stir well.
  2. Add 2 tablespoons shortening, 1 teaspoon salt, and 1 tablespoon sugar to the mixture.
  3. Dissolve 1/2 teaspoon baking soda in 1 cup buttermilk and add to the mixture.
  4. Add 2 well-beaten eggs to the mixture.
  5. Pour the batter into a greased baking pan.
  6. Bake at 375°F (190°C) for 30 to 40 minutes until golden brown and cooked through.
  7. Serve hot, spooned directly from the pan.
