Ingredients

  • 1 cup shredded Mozzarella cheese
  • 3 tablespoons Parmesan cheese
  • 1/2 cup mayonnaise
  • 3 tablespoons finely chopped onion

Instructions

  1. Wash potatoes well, bake, then slice in half lengthwise and scoop out the insides, leaving the skins intact.
  2. Preheat oven to 475°F and grease a baking sheet.
  3. Slice the potato skins into strips lengthwise.
  4. Brush the skins with melted butter and arrange them on the prepared baking sheet.
  5. Bake until crisp.
  6. Sprinkle with salt and serve as is.
