Ingredients

  • 1 cup cake flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 5 egg whites
  • 1/2 cup sugar
  • 5 egg yolks
  • 1/3 cup sugar

Instructions

  1. Sift the cake flour, then measure and sift again with salt and baking powder.
  2. Beat the egg whites until quite stiff, then add 1/2 cup sugar to the whites, 2 tablespoons at a time.
  3. Beat the egg yolks until thick and lemon colored, then add 1/3 cup sugar and beat into the yolks.
  4. Fold the beaten egg whites and yolk mixture together gently.
  5. Add vanilla extract, then sift the dry ingredients into the egg mixture and fold in gently.
  6. Pour the batter into an ungreased 4 1/2 x 10-inch tube cake pan.
  7. Bake in a preheated oven at 325°F (160°C) for 40 to 50 minutes until done.
  8. Turn the cake upside down and hang until nearly cold before removing from the pan.
