Crunchy Banana Bread
A moist and crunchy banana bread packed with coconut, dried fruit, and wholesome grains, perfect for breakfast or snacking with a tropical twist.

- Grease two 8 x 4-inch loaf pans.
- Preheat oven to 325°F (163°C). Combine all-purpose flour, wheat germ, baking powder, salt, and nutmeg in a bowl.
- In a large mixer bowl, with electric mixer on medium, beat eggs with sugar until light and thick.
- Beat in mayonnaise.
- Alternately beat milk and mashed bananas into the egg mixture, just until moistened.
- Fold in 3/4 cup of the flaked coconut and dried fruit bits.
- Pour the batter into the prepared loaf pans.
- Sprinkle each loaf with 1/4 cup of the remaining coconut.
- Bake for 1 1/2 hours or until a cake tester inserted in the center comes out clean.
- Cool completely on a wire rack after letting the bread cool in the pans for 10 minutes.
