Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/3 cup wheat germ
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup mayonnaise
  • 3 very ripe bananas, mashed
  • 1 cup dried fruit bits
  • 3/4 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon nutmeg
  • 1 1/2 cups sugar
  • 1/2 cup milk
  • 1 1/4 cups flaked coconut

Instructions

  1. Grease two 8 x 4-inch loaf pans.
  2. Preheat oven to 325°F (163°C). Combine all-purpose flour, wheat germ, baking powder, salt, and nutmeg in a bowl.
  3. In a large mixer bowl, with electric mixer on medium, beat eggs with sugar until light and thick.
  4. Beat in mayonnaise.
  5. Alternately beat milk and mashed bananas into the egg mixture, just until moistened.
  6. Fold in 3/4 cup of the flaked coconut and dried fruit bits.
  7. Pour the batter into the prepared loaf pans.
  8. Sprinkle each loaf with 1/4 cup of the remaining coconut.
  9. Bake for 1 1/2 hours or until a cake tester inserted in the center comes out clean.
  10. Cool completely on a wire rack after letting the bread cool in the pans for 10 minutes.
