Ingredients

  • 2 c. sugar
  • 1 c. shortening
  • 1 c. berry jam
  • 1 c. raisins
  • 3 eggs
  • 1 c. buttermilk
  • 3 c. flour
  • 1 c. chopped walnuts
  • 1 c. coconut
  • 1 tsp. allspice
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg

Instructions

  1. Cream the sugar and shortening until well combined.
  2. Add eggs and mix well.
  3. Stir in buttermilk and berry jam.
  4. Sift together the flour, allspice, cinnamon, and nutmeg.
  5. Gradually add the sifted ingredients to the wet mixture and mix well.
  6. Fold in the raisins, chopped walnuts, and coconut.
  7. Pour the batter into prepared baking pans.
  8. Bake in a 350°F oven for 40 minutes or until a toothpick inserted in the center comes out clean.
